Ingredients:

  • 1 large or 2 medium beets (skin left on and cubed)
  • 1 TBS sea salt
  • Filtered water

Optional Add-ins:

  • Ginger
  • Lemon
  • Orange
  • Cinnamon sticks
  • Turmeric root
  • Garlic
  • Fresh herbs
  • Spices

Instructions:

  1. Place the cubed beets into a half-gallon jar. If using non-organic beets, peel the skin before chopping.
  2. Add the salt, cover the beets with filtered water, and stir. Top the jar with a loose-fitting lid.
  3. Put the jar into a cool, dark place for 3 to 4 days to allow fermentation to occur.
  4. Strain the kvass and store it in a container in the refrigerator. Enjoy 3 to 4 ounces daily.

Additional Notes:

If you notice a white foam on top of the kvass, it’s likely harmless kahm yeast. Simply skim it off with a spoon.
