If you’re looking for a powerful way to support your gut, digestion, and liver health, look no further than beet kvass. This vibrant ruby-red lacto-fermented drink may seem trendy but its roots go back over a thousand years to Russia. Lacto-fermented beverages like beet kvass are packed with essential vitamins, minerals, enzymes, and beneficial bacteria that can enhance your well-being.
The Benefits of Beets
Beets, the key ingredient in beet kvass, are full of health benefits. There is research highlighting beets’ potential for antitumor activity, protecting the kidneys, enhancing cognitive function, and boosting exercise performance. They are rich in folate, vitamin C, and important minerals like potassium and manganese. But what truly sets them apart is betalain, a phytonutrient responsible for the red color of beets. Betalain is known for its antioxidant, anti-inflammatory, and detoxification properties.
Liver Support
Betalain, the superstar ingredient in beets, plays a crucial role in supporting the liver. It assists the body’s natural detoxification processes and boosts the function of liver cells, protecting them from disease. During a time when our lives are filled with daily toxin exposure, beet kvass becomes a valuable ally for maintaining liver health.
Gut Health and the Immune System
Your gut health is central to your overall well-being, as over 70% of your immune system is found in your gut. Beet kvass is a rich source of probiotics, which act as nourishment for the beneficial bacteria in your gut microbiome. This support results in improved digestion, regular bowel movements, and increased nutrient absorption. Gallbladder and Bile Flow
Beet kvass doesn’t just benefit your gut and liver, it also helps a sluggish gallbladder and promotes healthy bile flow. This, in turn, reduces toxins in the liver and increases the digestion of fatty foods while decreasing the risk of gallstones forming.

How to Enjoy Beet Kvass
Beet kvass has a slightly sour and earthy taste, making it an acquired drink. You can enjoy it as is, get creative by adding additional ingredients to it, or add it to soups or salad dressings. There are many possibilities for switching up the flavor, but I’m going to share the most simple and quick way to make a batch. If you’re feeling creative beyond that, experiment with one of the other optional add-ins and make it your own!
Ingredients:
- 1 large or 2 medium beets (skin left on and cubed)
- 1 TBS sea salt
- Filtered water
Optional Add-ins:
- Ginger
- Lemon
- Orange
- Cinnamon sticks
- Turmeric root
- Garlic
- Fresh herbs
- Spices
Instructions:
- Place the cubed beets into a half-gallon jar. If using non-organic beets, peel the skin before chopping.
- Add the salt, cover the beets with filtered water, and stir. Top the jar with a loose-fitting lid.
- Put the jar into a cool, dark place for 3 to 4 days to allow fermentation to occur.
- Strain the kvass and store it in a container in the refrigerator. Enjoy 3 to 4 ounces daily.
Additional Notes:
If you notice a white foam on top of the kvass, it’s likely harmless kahm yeast. Simply skim it off with a spoon.
To sum it all up, if you’re seeking to revitalize your gut, digestion, liver, and gallbladder health, don’t overlook the power of beet kvass. Give this ruby-red drink a try and experience the many benefits it offers.
